Creamy Pumpkin Soup
Soup is one of my favorite meals to cook in the fall. Here’s a super easy recipe for the creamiest pumpkin soup!
3 T unsalted butter
1 small white onion, finely chopped
1 T agave or honey
1 clove garlic, minced
1/2 t ground cinnamon
1/4 t white pepper
1/4 t ground nutmeg
3 cups vegetable broth (I like to use low sodium)
One can pure pumpkin puree
Sprinkle of cayenne pepper
Salt to taste
1/2 cup heavy whipping cream
Fresh parsley for garnish
In a large pot on medium heat, add butter and onion. Cook until butter melts and onion is translucent. Add agave or honey, garlic, cinnamon, pepper, nutmeg and cook for 2 more minutes until the spices are fully mixed in. Add broth and pumpkin puree and continuously stir until all ingredients are well mixed. Add in salt, cayenne pepper and cream. Let cool for 5-10 minutes.
With a large ladle, transfer the soup into a blender. Blend until smooth. Transfer the soup into soup bowls for serving. Serve with a drizzle of cream and fresh parsley as a garnish.
