Strawberry Basil Rhubarb Gin Fizz

Ingredients:
Juice from 1 lime
2 large basil leaves
4 oz strawberry rhubarb simple syrup (recipe below)
3 oz your favorite Gin
Splash of club soda

Simple syrup:
3 cups strawberries with the stems removed, chopped
4 cups rhubarb stalks, chopped
1 cup sugar
1 ½ cups of water

In a medium pot, add strawberries, rhubarb, sugar and water and bring to a boil. Let simmer for 25 minutes. Let the mixture cool to room temperature. Strain the mixture into a small bowl using a spoon to press down on the fruit, getting out as much juice as you can. This is your syrup. Add to a bottle or jar and keep refrigerated.

To make the Gin Fizz, add lime juice and basil to a mortar and pestle. Muddle together and add to a cocktail strainer. Add your gin, simple syrup and ice and shake well until mixed. Add ice to 2 cocktail glasses. Pour cocktail evenly between the glasses and top with a splash of club soda. Serve and enjoy!
