Short Rib Ragu

Ingredients:


Bone-in short ribs (about 3 lbs)
1 large yellow onion
3 cloves of garlic
1 large carrot
2 small cans of tomato paste
Carton of beef broth (32 fl oz)
Spices: Salt, pepper, onion powder, garlic powder, caraway seed, bay leaves, crushed red pepper,
Fresh rosemary, parsley
Splash of red wine

Directions:

Preheat oven to 350. Start with 3 lbs of bone-in short ribs. Place ribs in a Dutch oven. Add salt, pepper & olive oil. Place ribs in the oven to roast

While the ribs are roasting, chop a large onion, 3 cloves of garlic and a large carrot. Add onion, garlic and carrots to a saucepan and saute on medium heat with olive oil until they soften. Add 2 small cans of tomato paste to the vegetables. Stir in a carton of beef broth. Season to taste with your spices. Add seasoning and red wine to the sauce. Make sure to taste your sauce! Add more seasoning if needed. Bring to a boil. Then lower heat and let simmer for 10 mins.

Remove from heat and set aside. Take your ribs out of the oven. Pour sauce over the ribs. Cook for 3 hours at 350. Remove from the oven. The meat will fall off the bones. Remove bones from the sauce. Serve over your favorite pasta. Enjoy!
