Thai Basil Chicken with Vermicelli Noodles

Ingredients:

1/2 package of Vermicelli noodles (about 4 oz)
2 Tablespoons fish sauce
2 Tablespoons soy sauce
2 Tablespoons fresh lime juice
1 Tablespoon brown sugar
1 teaspoon hot sauce (optional)
1 clove of garlic, minced
Cooking oil (I like to use sesame oil for this recipe)
1/2 lb. chicken breasts cut into small pieces and seasoned with salt & pepper
1/4 cup matchstick carrots
1/4 cup Shiitake mushrooms, sliced
1/4 cup sliced green onions
1/2 cup fresh basil leaves
Salt & pepper to taste
1/4 cup chopped peanuts, roasted and salted (for garnish)
Cilantro leaves, chopped (for garnish)

Directions:

Cook Vermicelli noodles per directions on the package. Drain and set aside. Mix fish sauce, soy sauce, lime juice, sugar and hot sauce together in a small bowl and set aside.

In a large skillet or wok, heat 1 tablespoon of cooking oil on medium. Add garlic and cook for about 15 seconds until fragrant. Add chicken, carrots, mushrooms and green onions. SautΓ© for 5-7 minutes until chicken is fully cooked through.

Add sauce mixture and noodles to the chicken and vegetables. Toss all together until well mixed. Add basil and stir until slightly wilted. Garnish with peanuts and cilantro. Serve and enjoy!
