Beautifully Simple Italian Pomodoro Sauce

Pasta is one of my all time favorite foods. I remember being in Rome for the first time, eating fresh pasta every day was my absolute heaven. When I was there, I took a cooking class and learned how to make beautifully simple Italian Pomodoro Sauce. Here is the recipe!
Ingredients
2 cans whole plum tomatoes
2 t extra-virgin olive oil
1 medium onion finely minced
1 garlic clove crushed
Fresh basil leaves
Pinch of sugar
Salt & pepper to taste
Directions
Cut tomatoes in half and remove the seeds and juice. Chop roughly into chunks and set aside. Save any leftover sauce in the cans.
Heat a medium pot to medium low and add olive oil and garlic. Add onion and cook until translucent and fragrant.
Add tomatoes first and stir for a few minutes. Then add 3 basil leaves, pinch of sugar, salt & pepper. Cook all together for 5 minutes. Pour in remaining tomato juice from the cans. Cover pot and cook for 15 minutes, stirring occasionally.
Remove from heat and top with a few additional fresh basil leaves. Serve over your favorite pasta with lots of Parmesan cheese. Enjoy!
