Beef & Guinness Pot Pie

Ingredients:

1 lb. beef chuck cut into bite size pieces
1 tablespoon flour
Salt & pepper
Olive oil
1/3 cup yellow onion, finely chopped
2 garlic cloves, minced
1/3 cup carrots, chopped
1/3 cup celery, chopped
1/3 cup sliced mushrooms
1/3 cup frozen peas
1 small can tomato paste
1.5 cups beef broth
3 cups Guinness
4 tablespoons Worcestershire sauce
2 tablespoons fresh chopped thyme
2 tablespoons fresh chopped rosemary
1 sheet puff pastry
1 egg
Fresh herbs for garnish

Directions:

Place beef chuck in a bowl, season with salt & pepper and lightly coat with flour. In a large pot or Dutch oven, heat 2 tablespoons of olive oil on medium high. Add beef and brown on each side. Remove beef from the pot and set aside. Next add onion and garlic and cook for 2 minutes. Next add carrots and celery and sautΓ© until they soften (about 5 minutes). You can add more oil if needed. Stir in mushrooms and peas. Cook for another minute.

Reduce heat to medium and add meat back into the pot. Stir in tomato paste, broth, Guinness, Worcestershire sauce, and herbs. Using a wooden spoon, make sure to scrape any bits from the bottom of the pan. Season to taste with salt & pepper. Bring everything to a boil, then reduce heat to low. Leave pot uncovered and let simmer until meat is tender and sauce has thickened up to desired texture (between 1.5 - 2 hours). Make sure to stir occasionally.

Preheat oven to 400 degrees. If your puff pastry is frozen, now would be the time to remove it from the freezer. It usually takes 30-40 mins to defrost. You can make one large pot pie or 2 smaller ones (depending on the type of dish you want to use). Make sure whatever dish or dishes you choose that they are oven safe. Once stew is ready, spoon into your oven safe dishes. I like to fill mine up pretty high so they have more of a dome on top.

Next, beat your one egg in a small bowl. Place your puff pastry sheet on top of your stew (or cut in half and place one half on each of your dishes). You can pinch or fold the puff pastry on top however you like to create desired shape. Brush egg on top of puff pastry. Place dish or dishes in the oven and cook for 30-40 minutes until the puff pastry is golden brown. Garnish with fresh herbs and serve. Enjoy!
