Easy Beef Enchiladas
Ingredients:
1 tablespoon olive oil
1 small yellow onion, diced
2 cloves garlic, minced
1 lb. 80% lean ground beef
1/2 cup canned chopped green chiles
2 tablespoons taco seasoning
1/4 cup sour cream
Soft flour tortillas or wraps
2 cups red enchilada sauce
2 cups shredded cheddar cheese
Sliced jalapeños
Optional additional toppings: chopped fresh cilantro, sour cream, cotija cheese, salsa
Directions:
Preheat oven to 350 degrees F. In a large skillet, heat olive oil on medium and add onion and garlic. Stir for 3 minutes. Add ground beef and stir until fully cooked through. Stir in chiles and taco seasoning until well mixed. Add sour cream and stir for a few minutes until creamy. Remove skillet from heat.
In a large baking dish, coat bottom with a heaping spoonful of enchilada sauce. Spoon meat mixture into tortillas or wraps, lining them in the baking dish as you go. Repeat until all of the mixture is used up. Pour remaining enchilada sauce over them and top with cheddar cheese. Place slices of jalapeños on top of enchiladas. Bake for 15-20 minutes until cheese is melted.
