Avocado Toast with Crispy Prosciutto & Sunny Side Up Eggs
Serves 2
You’ll need:
2 slices of prosciutto, torn into small pieces
Olive oil
4 eggs
4 pieces of whole wheat bread
1 ripe avocado
Tajin seasoning (or you can just use salt & pepper)
Directions:
In a pan on medium heat, add a drizzle of olive oil and your pieces of prosciutto. Sauté until prosciutto becomes crispy (about 5 minutes).
Remove prosciutto and set aside, reserving the oil in the pan. Turn heat down to low and add your eggs being careful not to break the yolk.
While eggs are cooking, toast your bread and prepare your avocado by peeling and slicing. Eggs should take about 5 minutes. You’ll know they’re ready when the whites are set but the yolk is still runny. Remove eggs from heat.
Drizzle toast slices with olive oil, top each with 1/4 of the avocado. I like to mash mine in a little bit with a fork to help everything stay in tact. Then using a spatula, carefully place your sunny side up eggs on top. Sprinkle with crispy prosciutto and seasoning. Enjoy!
