Super Easy Baked Chicken Meatballs

Ingredients:

1 pound ground chicken (I like to use 95% lean)
1 large egg
1/2 cup Italian breadcrumbs
1/2 cup grated Parmesan cheese
2 tablespoons extra virgin olive oil
1 clove fresh garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
Non-stick cooking spray
2-4 cups of your favorite marinara sauce (depending on how saucy you want your meatballs)
1/2 cup fresh Burrata cheese (this is optional. You can also use additional Parmesan cheese)
1/4 cup chopped fresh basil leaves for garnish

Directions:

Preheat oven to 400 degrees F. Line a sheet pan with aluminum foil. Spray foil with non-stick cooking spray. In a large bowl, add ground chicken, egg, breadcrumbs, Parmesan cheese, olive oil, garlic, salt & pepper.

Mix with hands until thoroughly combined. Roll mixture into 1 inch meatballs (should make about 25-30 balls). Place them on sheet pan in a single layer. Bake for about 20 minutes until meatballs are browned and cooked through.

While meatballs are cooking, heat marinara sauce in a pot on the stove. Once meatballs are done, serve either in small individual bowls or a large serving bowl. Top with sauce, Burrata (or Parmesan) and fresh basil. Enjoy!
