Spring Salad with Avocado, Orange, Fennel, Mint & Rosé Vinaigrette

Salad Ingredients:

2 large oranges
2 large avocados
1 fennel bulb
1/2 cup fresh mint

Rosé Vinaigrette Ingredients:

1/4 cup rosé
1/2 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon honey or agave
2 teaspoons honey mustard
1 teaspoon dried basil
Salt & pepper to taste

Directions:

Peel and slice oranges and avocados into small pieces. Slice fennel into thin pieces. (Using a mandolin makes this step much easier!) Arrange oranges, avocado and fennel on a platter and sprinkle pieces of mint on top. Add dressing and serve. Enjoy!
