Shrimp & Roasted Pepper Skewers

Ingredients:
One lb shrimp (peeled and de-veined)
2 medium sized peppers (I like to get one red and one yellow) cut into 1 inch pieces
1 small red onion cut into 1 inch pieces
Olive oil
2 cloves of minced garlic
2 sprigs of chopped cilantro
Juice from 1 lime
Small wooden skewers (you can just get these on Amazon)

In a large skillet on medium heat, cook the red peppers, garlic and onion with olive oil for about 5 minutes. Lower the heat to medium-low and add the shrimp, cilantro, salt & pepper. Cook until the shrimp are pink on both sides. Add the lime juice and cook for 1 more minute.

Remove all ingredients from heat. Let cool for a few minutes. Then start putting on skewers alternating the ingredients (shrimp, pepper, onion) until all the ingredients are used up. Can serve slightly warm or at room temp.

If you want a dip for this, I mix sour cream, garlic, salt, pepper, lime juice and a little bit of siracha sauce!
