Turkey, Quinoa & Kale Meatballs

Ingredients

2 pounds lean ground turkey
1 cup cooked quinoa
1 cup finely chopped kale
1 white onion, diced
3 minced garlic cloves
1 cup grated Parmesan cheese
½ T dried basil
½ T dried oregano
Pinch of salt & pepper
½ cup dry red wine
2 eggs
3 cups of your favorite marinara sauce (my favorite is Rao’s)
More Parmesan cheese for topping

Directions


Preheat oven to 400 degrees. In a large bowl combine turkey, quinoa, kale, cheese, garlic, onion, basil, oregano, salt, pepper, wine & eggs. Use your hands to mix and create 2 inch meatballs. Place on a baking sheet 1 inch apart. Bake for about 30 minutes until fully cooked through.

While your meatballs are cooking, heat up your favorite marinara sauce on the stove top. Once meatballs are ready, top with sauce and Parmesan cheese. Enjoy!
