Lemon Ricotta Pancakes

Ingredients:

1.5 cups flour
1 T baking powder
3 T sugar
1 t salt
2 eggs
1 cup whole milk
1/2 cup ricotta cheese (plus an extra spoonful to garnish with)
1/4 cup fresh lemon juice
2 T fresh lemon zest (plus a little extra to garnish with)
1 t vanilla extract
Non-stick cooking spray or butter
Lemon slices for garnish

Directions:

Mix dry ingredients in a large bowl. Add eggs, milk, ricotta cheese, lemon juice, zest and vanilla extract and whisk until smooth. Heat a griddle or frying pan to medium and spray with non-stick cooking spray or add butter. Add pancakes 1 cup at a time and cook until small bubbles start to form. Then flip pancake and continue cooking until golden brown on each side. Once all pancakes are cooked, place in a stack and garnish with a spoonful of ricotta cheese, an additional sprinkle of lemon zest and lemon slices. You can serve with maple syrup or without. Enjoy!
