Lemony Zucchini Ribbon Salad

Ingredients

3 large zucchinis (I like to get green and yellow ones for color variety)
Juice from one lemon
1/4 cup sliced almonds
1/4 cup crumbled goat cheese

Directions

Squeeze fresh lemon juice into a bowl and set aside. Using a mandoline or vegetable peeler, cut zucchini into thin pieces lengthwise. Add zucchini to bowl of lemon juice. Toss well and let marinate for 10 minutes. Remove zucchini ribbons from lemon juice and plate them. Top with sliced almonds and crumbled goat cheese. Serve and enjoy!
