Kale Caesar Salad with Toasted Breadcrumbs

Ingredients:


1 large bunch of kale
3 cloves of garlic, peeled
6 T grated Parmesan cheese
1 cup extra virgin olive oil
1 cup fresh lemon juice
1 T Dijon mustard
Salt & pepper to taste
1/3 cup Italian breadcrumbs

Directions:

Rinse kale, remove the stems and cut into small pieces. In a blender or food processor, combine garlic, Parmesan cheese, olive oil, lemon juice, mustard, salt and pepper. Blend until smooth.

In a large serving bowl, toss the kale and dressing until well mixed. Let dressing marinate on the kale to soften the leaves for about 20 minutes. While you’re waiting, toast breadcrumbs in the toaster or oven at 350 until golden brown.

Sprinkle breadcrumbs on top of salad and serve. You can also garnish with some additional Parmesan cheese if desired. Enjoy!
